About the Food
Our pibil is made by slow-cooking, shredded mushrooms. It’s served with pickled onion, and a classic Mexican combination of coriander and salsa roja. We use shiitake mushrooms in our version that we marinate with achiote, which is a traditional seed used in Mexican cooking to give extra colour and flavour to dishes.
History Of the Dish
The work pibil actually refers to the method of cooking the traditional meat in this dish. Pibil would be cooked in a pit where the food would be slow cooked, buried in a bed of hot coals and rocks, generally wrapped in banana leaves. This way of cooking was used in the Yucatan Peninsula and some parts of Central America both today and since pre-Hispanic times.
