A chef's favourite to cook! Carnitas translates to “little meats” but ours are made up of sautéed king oyster mushrooms, that we serve with roasted spring onions and coriander-lime creme. Our secret is that we marinade our mushrooms in Coca-Cola to add a deliciously unique flavour to a classic dish.
History Of the Dish
Carnitas originated in the state of Michoacan, traditionally they are cooked in a copper pot on a low heat. The trick is to let it simmer until the meat, or in this case the mushrooms, are tender all the way to the centre.
